Skinny Carrot Cake . . .
If you've read my previous post from last weekend, you will know that I've recently invested in the Hairy Bikers latest book, and this very cold and snowy weekend saw Jason and I make the carrot cake. it's one of the best carrot cakes I've ever tasted, it was so moist, and got better after a couple of days after baking. the only thing that could of possibly improved the cake would be the addition of some walnuts, but then this would inevitably drive up the calorie count.
Definitely one to make again!
